What's For Dinner #1 - Stuffed Peppers

I am frequently asked what kind of food my family eats on a budget of $50.00 per week. We have a sit down meal every night, unless our schedule doesn't allow. On weekends when everyone is coming and going a lot, each person fixes leftovers. Here is an example of what I made for dinner last night, with ingredients from this week's shopping deals.

First, I stopped into Food Lion and scanned my MVP card at the kiosk. I got a coupon for 75 cents off any bag of My Essentials Rice, so I grabbed this little bag for 82 cents:

Then I picked out 5 green bell peppers, a carton of organic grape tomatoes, some bananas, a bag of Sargento shredded cheese and a box of Idaho Spuds. I used both the $5.00 FLIP and the $2.00 Produce FLIP. My bill came to $3.25 with tax.

Then I found a recipe and modified it for the ingredients I had on hand and to serve five. I cooked  one and 1/2 cups of rice according to the directions in one pot. I preheated the oven to 400 degrees, then halved and cored the peppers and placed them cut side down on a baking sheet sprayed with cooking oil to roast for 25 minutes.

Next, I heated 2 Tbls. and 1 1/2 tsp of olive oil in a skillet and added:  1 small chopped onion, 2 1/2 tsp basil, 2 1/2 tsp Italian seasoning, 2 1/2 tsp salt, and 1 tsp pepper and cooked 2-3 minutes until it looked like this:

 I stirred in a can of diced tomatoes from my stockpile and cooked for 5 more minutes:
 I also added a bag of bacon bits that I got cheaply at the last Harris Teeter Super Doubles event:
Next I added the rice and heated through. After turning off the heat, I added 1 and 1/4 cups of shredded cheese and mixed it all up: 
 While I was making the peppers my daughter, Bridgette, was in charge of the Idaho Spuds. Here she is reading the microwave directions:
Finally, I removed the peppers from the oven, stuffed them, and put them back in to cook for 5 more minutes:
Voila! Stuffed peppers and mashed potatoes with leftover cornbread and candied yams was our dinner last night.  Bridgette says it was THE BEST SHE'S EVER TASTED and had another one for lunch today!

There has been kind of a saga on the Food Lion Facebook page since my original post about the $5.00 coupon good on any $5.00 purchase and not expiring until December, 2013.  First, Food Lion said that the coupon expiration date was correct.  Then, they reversed themselves with this post:

The original coupon had a typo; however, we have since resolved the issue and are now accepting the coupon until 1/1/2013. My Free Movie and Discount Lunch Adventure!

I read the book Life of Pi about 7 years ago and loved it, so I was excited when it came to theaters this month. I decided it would be the perfect film for which to use movie passes that I have earned by collecting codes off specially marked packages of Schick SlimTwin Razors and Kellogg's Cereals. The movie was in 3D, which means the tickets normally cost $13.50 apiece. And since all my kids are over the age of 12 now, the cinema classifies them as adults for ticket price purposes. That means our movie tix would have cost $67.50!

Prior to the movie, we stopped into Red, Hot & Blue for lunch. Last year I signed up all five of us for the RHB Club. That means each family member received a postcard for a free meal on their birthday. What you may not realize is that Red, Hot & Blue will allow you to use more than one of these postcards on the same tab AND will accept them after they have expired. We essentially paid for 3 lunches and got 2 free, reducing our bill from from about $60.00 to about $45.00 with taxes and tip.

The Spidey Code passes can be used for concessions as well as tickets at the theater, so we didn't need to spend any cash at the concession stand either. While I did get some Spidey Codes by purchasing cereal, I found many of them at my local recycling center while dumpster diving for coupons. The program runs until June 2013, so there is still time to collect more!

In the end, we had a nice family outing that would normally have run about $125.00, but we only spent $9.00 per person for lunch and a movie -  and I am happy to report that the movie was just like the book!!

Today I swung into Harris Teeter to take advantage of the Saturday only eVic price on Dixie Crystals sugar and to grab a few more items for our Christmas dinner. I had a $20.00 pharmacy credit to use, as well as a coupon for $5.00 off a $25.00 purchase coupon from Recyclebank. The coupon was for Shopper's Food Warehouse, but Harris Teeter accepted it as a competitor's coupon. My total for everything but the pizza came to $26.95, but I only paid $1.95 out of pocket!

Special thanks to Stefanie Egee of Macaroni Kid for the Chiquita Bites freebie coupon. I used a Buy One Get One Free home mailer coupon for the Oscar Mayer Carving Board lunch meat, which normally costs $6.89. These items helped me to reach the $25.00 minimum that I needed.

My store was out of the Davidson Safest Choice Eggs, so I got a raincheck.

I bought bread, milk, and white and brown sugar without coupons because I had 2 pharmacy credits and I thought they would both come off.  I learned on this trip that you may only use 1 per transaction.

I will get back $1.50 from Saving Star for the Soft Scrub and Pillsbury Crescent Rolls, and I will submit for a $3.00 Mail-in-Rebate on the Butterball turkey:
